India has a honey problem. In a widely reported 2020 investigation, the Centre for Science and Environment (CSE) tested leading honey brands and found that most passed India's routine purity tests but failed the stricter NMR test used internationally, evidence of sugar-syrup adulteration engineered specifically to beat standard checks.
That's the hard part: modern adulteration (modified rice syrup, invert sugar) is designed to look and taste like honey and to slip past the obvious tests. So the kitchen experiments you've seen on Instagram mostly tell you nothing. Let's clear those first.
The home tests that don't work
These are popular, and none of them reliably distinguishes real honey from a good syrup.
The water test
"Pure honey sinks in a lumpy blob; fake honey dissolves." In reality, whether honey settles or disperses depends on its moisture and temperature, not its purity. Thick sugar syrup sinks too.
The thumb test
"Real honey stays put on your thumb; fake spreads." Consistency varies with water content and floral source. It tells you about thickness, not authenticity.
The flame / matchstick test
"Pure honey lights a matchstick." Any honey low in moisture can help a flame catch, and a dry syrup can too. Moisture level is not purity.
"It crystallized, so it's fake" (or the reverse)
Crystallization is natural and depends on the fructose-to-glucose ratio. Some pure honeys set hard in weeks; acacia honey naturally stays liquid for months because it's high in fructose. Neither state proves anything.
The takeaway: if a test can be done on your kitchen counter, a competent adulterator has already designed their syrup to pass it. Real proof comes from a lab.

The tests that actually work
These require an accredited lab (in India, look for NABL accreditation). A brand that's serious about purity will have run them and will share the report.

NMR profiling is the international gold standard and covers most of the above in one test, but it's expensive, so many honest small producers rely on C4 + C3 + pollen instead. That combination is perfectly credible.
What to actually check before you buy

You can't run a lab test in a shop, but you can read the signals that correlate with a brand that has nothing to hide:
- A named floral source and origin — "acacia honey from Kashmir," not just "honey."
- An FSSAI licence number printed on the pack.
- A batch or lot number — purity is per-batch, so a brand that tests will track batches.
- A published lab report — ideally an NABL report you can view (often via a QR code on the jar).
- Honest claims — beware vague "100% pure / natural" with no report. Specific, testable claims beat adjectives.
