Most honey sold in stores is blended from multiple sources, heated, and often adulterated with sugar syrups. Our honey is single origin Kashmiri acacia, raw, unprocessed, and lab tested. It also has a naturally high fructose content and a low glycemic index (~32), which most commercial honeys do not.

A low GI means the sugars in acacia honey are absorbed slowly into your bloodstream, giving you sustained energy without a sharp spike and crash. At a GI of ~32, it is well within the "low" range (below 55), making it a better option if you are mindful of blood sugar.

It comes down to chemistry. Acacia honey has a much higher fructose to glucose ratio than most honeys. Fructose resists crystallization, so the honey stays liquid, smooth, and pourable for months, no need to heat it back up.

Store at room temperature away from direct sunlight. There is no need to refrigerate. Raw honey has an essentially indefinite shelf life when stored properly.
