Which honey has the lowest glycemic index?

Acacia, at around 32. Nearly every other honey sits between 55 and 65, which is roughly where white sugar sits. The gap is large, it has a specific cause, and it is also more often misunderstood than any other fact about honey.

Glycemic index measures how quickly a food raises blood glucose, on a scale where pure glucose is 100. Below 55 counts as low. It is a measure of speed, not of how much sugar something contains, and that distinction does most of the work on this page.

Why acacia is different

Honey is mostly two sugars, glucose and fructose, in a ratio set by the nectar source. Those two behave very differently once you eat them.

Glucose enters the bloodstream directly and raises blood glucose quickly. Fructose is metabolised largely in the liver and has a much smaller immediate effect on blood glucose. So the more a honey leans toward fructose, the lower its glycemic index.

Acacia honey has an unusually high fructose to glucose ratio. That single property is what puts it around 32 while most honeys sit near sugar.

The same fact explains why it stays liquid

Crystallisation happens when glucose comes out of solution and forms crystals. Fructose is far more soluble and stays dissolved much longer. So a honey weighted toward fructose sets slowly, or barely at all.

It is the same ratio producing both effects. A honey that stays pourable for a year and a honey with a low glycemic index are, chemically, the same honey.

Useful side note: this means crystallisation is not a purity test in either direction. Real honeys high in glucose set within weeks. Real honeys high in fructose stay liquid for a year. Sugar syrup can do either. Anyone telling you that liquid honey is fake, or that crystallised honey proves it is real, is guessing.

What a low glycemic index does not mean

This is where most writing on the subject becomes useless, so plainly:

Honey is still sugar. Acacia honey is roughly eighty percent sugar by weight. A low glycemic index changes the shape of the curve, not the fact that there is one.

Glycemic index ignores portion. It describes a fixed amount of carbohydrate, so a low GI food eaten in quantity can affect blood glucose more than a high GI food eaten sparingly. How much you have matters more than which jar it came from.

Fructose is not free. Because it is processed in the liver, fructose has less immediate effect on blood glucose, but a high fructose intake carries its own well documented concerns. Lower GI is not the same as harmless.

This is not diabetes advice. Honey is not a diabetes food whatever its glycemic index. If you are managing blood sugar, treat honey as sugar and follow your doctor or dietitian rather than anything written by someone selling it, including us.

What a low glycemic index genuinely gives you is a gentler rise from the same spoonful, and a sweetener that tastes mild enough to use less of. That is a real and modest benefit, and it is worth more than the way this is usually sold.

Why the honey you buy may not be the honey that was tested

The figure of 32 belongs to acacia honey, not to whatever a jar says on the front. Sugar ratio follows the flower, so the number only applies if the honey really is predominantly acacia.

Two things break that in practice. Blending, where acacia is mixed with cheaper honey from unrelated sources, moves the ratio toward the average. And adulteration with sugar syrup does the same thing more severely, since most syrups used are glucose based.

So a low GI claim is only as good as the floral source behind it, and floral source is established by pollen analysis, which identifies the flowers the bees actually worked. Without that, the number on the page is borrowed from a study rather than describing what you bought.

None of this can be judged by eye, and none of it can be judged at home. Worth knowing before paying a premium for any of the words on this page, ours included.

What acacia honey is

It comes from the blossom of the black locust tree, which flowers for a short window each year. In the valleys of Jammu and Kashmir that window is a few weeks, so the size of a harvest is set by the flowering rather than by a production plan.

There is no need to manufacture scarcity. Nature already does it.

It is pale, floral and mild rather than dark and assertive, which is why it works in tea and kahwa where a stronger honey competes instead of complementing. And because it stays liquid on its own, there is no reason to warm it, which is how we would rather handle it anyway.

I grew up in Jammu eating it at home, spread on rotis and stirred into kahwa. It was not a premium product, it was just the honey we had. Years later, looking for the same thing again, I could not find it. That is how this started.
